Coconut Muffins

Introduction
I listed the following recipe on the previous n.com and it got a huge following as a fab recipe on it's own but also as a base for dried fruits, choc chips, iced, frosting. I normally double the below recipe and that makes 24 monster muffins and I mean HUGE. Hope you all like it as much as my oat so simple cookies :o))).

Ingredients
Serves: 12
For the Muffins
- 1 cup unsweetened unsweetened shredded coconut
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 5 tablespoons sugar
- 1 teaspoon sea salt flakes
- 1 large egg
- 1 cup reduced fat milk
- ½ cup oil
For the Optional Topping
- 2 tablespoons sugar
- 2 tablespoons coconut
- halved candied cherries

IDEAS - Stir in choc chips before baking Put a blob of strawberry jam in the middle Eat with fresh strawberries or pineapple or mango for breakfast. Bake plain, break open whilst warm and eat with jam for breakfast Put in dried pawpaw or banana for a tropical taste. The list is endless.

A bit disappointed. I have just baked this recipe, and I think it calls for too much salt. My muffins turned out too salty, you can't even taste the sugar. Other than that: nice texture.
