Pre Heat the oven to 170'C, 350'F or Gas Mark 4. Grease a medium sized loaf tin (or line with Greaseproof paper). Beat together the Oil & Sugar. Add the eggs & Bananas mixing well. Add all other ingredients. Mix well and then pour into loaf tin. Bake for 1 - 1.5 hours or untill golden on top and firm to touch. Leave to cool then slide knife round edges and tip out, place on cooling rack and .... ENJOY!

This is a Fabulous recipe! Very easy and contains no fat/butter. A Winner with family & friends.

- ½ cup cooking oil
- 1 cup superfine sugar
- 2 eggs
- 3 ripe bananas
- 2 cups self-rising flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 3 tablespoons milk
- ½ teaspoon vanilla essence

Additional Information
This is a very soggy mixture and cooking times may vary on your oven. Just make sure you keep and eye on it and a skewer/knife to hand to check its cooked.

Nice and easy recipe. I added cinnamon and raisins for a little extra niceness. It baked in about 50 mins but I added a bit more flour.
I made this! Hardly fat free though with loads of cooking oil. Was moist and nice enough but I've made other recipes that were much nicer. Sorry.
Made this yesterday and it's yummy. Ive just realised I missed out the baking powder but obviously wasn't a problem, I also threw in some chocolate chips. Big hit with the family.
Just made this Banana loaf but added a little cinnamon. I must say..it lovely and so simple to make. thanks for the recipe :)
