Vegetable, Olive and Caramelised Onion Tagine

In a skillet heat olive oil and add garlic and ginger. Saute for a few seconds. Add all the vegetables and saute for a few more minutes. Next add capers, olives, chillies, salt and pepper. Then add wine and cover the skillet and let the vegetables cook well. Once the vegetables are tender yet slightly crisp. Transfer in serving bowl and garnish with coriander and pomegranate. Serve hot with couscous
Introduction
I saw this recipe Lamb, olive and caramelised onion tagine on Nigella express on Discovery Travel and living. I am a vegetarian and often like to replace meat/sea food with vegetables in interesting recipes. When i saw this recipe i was eager to try it out. Here is my version of Vegetable, olive and caramelised onion tagine

Ingredients
Serves: 2
- 4 cups mixed vegetables (like zucchini, broccoli, spring onions, bell peppers, mushrooms, tomatoes, baby corn - chopped into bite-sized pieces)
- 6 cloves minced garlic
- ½ cup pitted black olives (drained)
- 1 cup sweet onion confit (either from a jar or freshly made)
- 2 tablespoons capers (drained)
- 2 teaspoons ground cumin
- 2 teaspoons fresh ground ginger
- 2 cups red wine
- 1 teaspoon ground green chile
- 1 teaspoon olive oil
- salt (to taste)
- pepper (to taste)
- ½ cup cilantro
- ⅓ cup pomegranates
