Shrimps Moqueca

Introduction

It is a very popular brazilian dish, with strong african and brazilian native roots that you may eat in big restaurants or little kiosques along 8.000 Km of brazilian littoral. I believe small kiosques are much better, ´cause the cooker process just beside you, while you drink a cold beer.

Ingredients

Serves: 4-6

  • shrimp
  • onions (slices)
  • pepper (red, green and yellow - don't use purple ones)
  • tomatoes
  • garlic
  • chilli (preferably Malagueta)
  • coconut milk
  • olive oil (or canola oil)
  • salt
  • lime juice
  • manioc flour
  • fresh coriander
  • beer (ice cold)

Method

  • Better use some stone or earthenware pot, or even an wok (you may use that alcohol device like Fondue apparatus). Open up a beer, drink it.
  • Marinate the shrimp in lime juice and salt for about 30 minutes.
  • Meanwhile heat oil in a pot over medium flame, Place layers of onions, garlic, chilli and peppers (peperone), wait 2 minutes, just to onions get some "colour" and add tomatoes and simmer about 5 more minutes to cook down. Stir in coconut milk and marinated shrimp, simmer at a low heat, Open up another beer, and drink it while simmer gently for about 3 minutes till shrimp is cooked through (any more than 3 minutes and the shrimp becomes rubber) add coriander.
  • Try to withdraw some spoons of that "juiced sauce" and, in other pot, smash 3 or 4 chillies add the "sauce", add manioc flour mix it up (this pap is named Pirão). Muqueca is very popular and you may to use any type of seafood.
