Italian Strata

Introduction

Tangy, strong tasting dish. This selection may be somewhat runny at times due to the spinach being frozen. It is really important to squeeze as much of the liquid out of the thawed spinach before using. Fresh spinach may be used although it requires lots of washing!!! In Canada we often use a product called veggie ground instead of veal, beef or turkey. Yves Veggie Ground is pre-cooked in Original or Italian flavouring. This saves on preparation time. One may use another brand of cheese or perhaps low fat. Also the tomato sauce may be substituted with a can of tomato soup.

  • ¼ cup minced onions
  • 1 pound ground veal (or beef)
  • 8 ounces tomato sauce
  • 1 teaspoon fresh basil
  • 1 teaspoon fresh parsley
  • ¼ tablespoon oregano
  • 1 pinch of garlic salt
  • 1 pinch of pepper
  • 4 ounces mushrooms (canned and drained)
  • 10 ounces frozen spinach
  • 8 ounces cottage cheese
  • 4 ounces mozzarella (cut in strips)

  • Saute onion and ground meat until onion is transparent.
  • Add tomato sauce, basil, parsley, oregano, garlic salt, pepper and mushrooms.
  • Squeeze liquid from thawed spinach; combine with cottage cheese.
  • Arrange layers of spinach mixture, meat mixture and cheese in baking dish. Repeat, ending with cheese.
  • Bake in 375 degree oven for 15 to 20 minutes.
