Thai Chicken Balls

Combine mince, breadcrumbs, fish sauce, sweet chile sauce, onions, coriander, mixing well. Roll mixture into walnut-sized balls. Refrigerate for 15 minutes. Combine extra sweet chile sauce and lime juice. Set aside. Heat oil in a non-stick frying pan over a medium heat. Cook chicken balls in batches until golden and cooked through. Serve with sweet chilli dipping sauce.

- 1 cup breadcrumbs
- 1 tablespoon thai fish sauce (nam pla)
- 2 tablespoons sweet chile sauce
- 2 sliced scallions
- ¼ cup chopped cilantro
- ⅓ cup sweet chile sauce (extra)
- 2 teaspoons lime juice
- 2 tablespoons peanut oil
