Gooey Jersey Black Butter and Banana Pudding With Jersey Cream Fudge Sauce

Mix all the ingredients and spices together and spoon in 35 small pudding dishes which have been lightly buttered. Cover each pudding and steam in 1 1/2 pints of boiling water until cooked.
Introduction
Makes 35 little steamed puds which have a delicious treacle, apple and spice flavour from the Jersey Black Butter preserve. Jersey Black Butter preserve is only available in Jersey but you can buy it on line www.jerseyproduce.com. Decorate with melted fudge sauce and serve with vanilla ice cream...yum, yum! This recipe was given to me by my favourite restaurant here in Jersey the Salty Dog and it is the best pudding i have ever tasted.

- 4 bananas
- 12 ounces chopped dried dates
- 12 ounces chopped fresh apricots
- 3 tablespoons baking soda
- 8 ounces butter
- 24 ounces self-rising flour
- 1¼ pints boiling water
- 24 ounces sugar
- 8 medium eggs
- 8 ounces black butter
