Roll out the pastry and place it in the pie dish you are using put a layer of cold mashed potato that fills the pie a third Add a layer of cheese and diced onion and continue the layers until pie is filled, making sure last layer is cheese and onion pour over egg mixture place pastry lid on top, seal edges bake in pre heated oven about 180 for 30mins but checking it, cook until golden brown and eggs seem set then leave to cool and set
Introduction
Mum once tried to make a quiche, it didnt really go to plan and just added a pastry lid and the pie was born. Best eaten cold i think, no real measurements, just do it to whatever size pie dish you have

- shortcrust pastry (ready made)
- potatoes (mashed, cold)
- 2 onions (diced)
- mature cheddar (a good amount, or mix it up with some blue cheese for extra strong taste)
- 3 eggs (about)
- eggs (extra, for brushing the pastry)
