The Best Banana Muffins Ever!

these are gorgeous and easy to make....wait until cooled to be eaten, but then you can heat them up for 20 seconds in the microwave if you want them warm. They must be pretty healthy too considering there's fruit in them! hehe. so try it! theyre amazing!

Ingredients

Metric Cups
  • 150 grams plain flour
  • 150 grams caster sugar
  • 150 grams margarine (melted)
  • 2 large eggs
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 bananas
  • 5⅓ ounces all-purpose flour
  • 5⅓ ounces superfine sugar
  • 5⅓ ounces margarine (melted)
  • 2 large eggs

Method

The Best Banana Muffins Ever! is a community recipe submitted by emma_07 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Preheat the oven to 200 degrees C *...and place 12 cake cases in a deep muffin pan
  • in a large mixing bowl, sift the flour, baking powder and salt and give a slight stir with a wooden spoon.
  • Measure out the sugar and stir into the floury mixture.
  • Whisk together the milk, eggs and MELTED margarine in a SEPARATE bowl!
  • Now pour this into the flour and sugar mixture, stirring/lightly folding carefully with a metal spoon.
  • In a separate bowl, mush together 2 bananas. I always find them better when they're ripe anyway and i can mush them up with the back of a spoon-fun fun fun!
  • fold the mashed up bananas into the muffin mixture. * when it's all stirred together, spoon the mixture into the muffin cases and cook for about 15-20 minutes in the preheated oven until golden brown.
  • cool on a wire rack but don't be tempted to eat until properly cool :-) enjoy! these are amazing! id love to hear what you guys think too :-)

    • Could you please add how much milk i need to the ingredients. I had to guess so i put in 50ml.

    • Inspite of the method mention to add milk, in the ingredients do not have this information available. What's is the correct quantity of milk in this recipe?
