Add the water into a saucepan and sprinkle the gelatine over and let it soften for a couple of minutes. Add the milk, espresso powder and heat the mixture over a moderate heat, whisking constantly until the powder is dissolved. Take off the heat and let it cool, stirring every now and then. (The mixture should be really cool to the touch). In another bowl whisk the cream until stiff and then fold the cool coffee mixture gently. Spoon the mixture into pretty glasses and chill.
Introduction
A really easy to make mousse, the name says it all, you really do cheat. I assure you it's quite yummy. I can't eat a lot of it but it's not everyday that you indulge.

- 2 teaspoons instant espresso powder
- ½ cup cream
