For the Chocolate Cake with Coffee Buttercream from At My Table, could I use 250ml hot espresso coffee instead of the boiling water and instant espresso powder?
Our answer
Nigella's Chocolate Cake With Coffee Buttercream (from AT MY TABLE) is an easy to make chocolate cake as you simply stir the ingredients together. The sponge and buttercream are flavoured with espresso powder. For the sponge it would be possible to use some freshly brewed espresso coffee. Using all espresso may be a bit too overpowering, so we would suggest using 125ml (1/2 cup) fresh espresso and 125ml (1/2 cup) freshly-boiled water.
For the buttercream you could use 1 tablespoon of freshly brewed espresso, but it will not give a particulalry strong flavour and adding more liquid could make the buttercream too runny. If you can buy Camp liquid coffee concentrate then you could use 1 tablespoon of this as it will give a stronger flavour. Alternatively, you could use regular instant coffee granules dissolved in hot water. To get a similar strength, we suggest using 3 teaspoons instant coffee granules and and dissolving this in 1 tablespoon of boiling water.
