Metric Cups
  • 450 grams dates
  • 20 grams dried chillies
  • 15 grams fresh ginger
  • 112 grams sugar
  • 7 cloves garlic
  • 625 millilitres white wine vinegar
  • salt (to taste)
  • 16 ounces dates
  • 1 ounce dried chiles
  • 1 ounce fresh gingerroot
  • 4 ounces sugar
  • 7 cloves garlic
  • 2½ cups white wine vinegar
  • salt (to taste)

Method

My Maman's Date Chutney is a community recipe submitted by etoile and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Stone the dates and blitz them in your food processor.
  • Blitz the chillies, ginger, garlic with a dash of vinegar.
  • In a pan mix the sugar and the rest of the vinegar. Add the ground chili mixture. You can add a few cloves and a stick of cinnamon to this mixture for fragrance.
  • Boil until the mixture is thick.
  • Let it cool and then add the dates. Then pour into sterilised jars.
