My Maman's Date Chutney

Stone the dates and blitz them in your food processor. Blitz the chillies, ginger, garlic with a dash of vinegar. In a pan mix the sugar and the rest of the vinegar. Add the ground chili mixture. You can add a few cloves and a stick of cinnamon to this mixture for fragrance. Boil until the mixture is thick. Let it cool and then add the dates. Then pour into sterilised jars.
