Ingredients

Metric Cups
  • 50 grams butter
  • 3 medium potatoes (peeled and diced)
  • 1 medium onion (finely chopped)
  • 1⅛ litres vegetable stock (or chicken stock)
  • salt
  • pepper
  • milk (or cream, to taste)
  • 1¾ ounces butter

Method

  • Melt the butter in a large pot. Add potatoes & onion. Toss till well coated with butter. Season with salt & pepper. Cover and sweat for under 10mins.
  • Add in the stock and bring to boil. Simmer until potatoes are well cooked.
  • Blend the soup till smooth and add cream/milk to taste.
  • Reheat if required before serving.
