Melt the butter in a large pot. Add potatoes & onion. Toss till well coated with butter. Season with salt & pepper. Cover and sweat for under 10mins. Add in the stock and bring to boil. Simmer until potatoes are well cooked. Blend the soup till smooth and add cream/milk to taste. Reheat if required before serving.
