  • 4 medium charlotte potatoes
  • 4 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • pinch of salt
  • handful marshmallows

Method

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes, then slice them into ¼-inch thick rounds.
  3. In a small bowl, mix together the melted butter, brown sugar, cinnamon, nutmeg, allspice, and salt.
  4. Arrange the sweet potato slices in a single layer on a baking sheet and brush them with the butter mixture.
  5. Roast the sweet potatoes in the preheated oven for 20-25 minutes, until they are tender and starting to brown around the edges.
  6. Remove the baking sheet from the oven and sprinkle the marshmallows over the top of the sweet potatoes.
  7. Return the baking sheet to the oven and bake for an additional 5-7 minutes, until the marshmallows are golden brown and puffed.
