Raw Apple Cake

Cream the first butter and sugars (they don't actually cream because of the ratio of butter and sugar, but make sure they are well blended) add eggs and cinnamon. Add milk and flour and soda alternating between dray and wet. Fold in apples. Pour into a 20 x 10cm pan. Mix and top with 1/4 cup brown sugar, 1/2 cup granulated sugar and 1 tsp cinnamon. May add 1.2 cup chopped nuts to this. Bake at 180ºC for 30 minutes or until done.
Introduction
One of my all-time favourites! Great served with tea or for dessert with whipped cream. Also great for picnics and lunch boxes.

Serves: 4-6
- ½ cup butter
- 1 cup granulated sugar
- 2 teaspoons cinnamon
- ½ cup brown sugar
- 2 eggs
- 1 cup buttermilk (or sour milk - for when you do not have buttermilk, add 1 tablespoon of vinegar to milk to sour it)
- 2½ cups flour
- 2 cups apples (raw, chopped fine or grated)
- 2 teaspoons baking soda
