Forget other potato salads, this is an absolute party treat. All my friends are hooked on it. I received it from a German friend of mine who got it from her grandmother.

Ingredients

Serves: 4

Metric Cups
  • 1 kilogram baby potatoes
  • 1 packet smokey bacon (back bacon)
  • 200 millilitres olive oil (depends on taste)
  • 1 large onion
  • sweet and sour gherkins
  • 2 egg yolks
  • 2⅕ pounds baby potatoes
  • 1 packet smokey bacon (back bacon)
  • 7 fluid ounces olive oil (depends on taste)

Method

  • Boil or steam the potatoes with skin on until they are cooked through Let the potatoes cool down and peel them and cut them in slices
  • Cut the onions and the bacon in little pieces and fry them in the olive oil until the bacon is cooked through, make sure that the onions do not get brown
  • Tip the bacon, onion and olive oil mixture over the potatoes in a heat resistant bowl
  • Cut around 4 sweet and sour gherkins into cubes and add to the bowl Mix together and add more olive oil if needed and an egg yolk or two

    I found steaming a lot better for the potatoes, baby and salad potatoes are the best and it is really worth it to peel the skin off the potatoes as the bacon, onion and olive mixture will be absorbed
