Chop red onions and garlic finely Cut bacon into strips. Add to good sized stock pot with a teaspoon of oil and sweat off onions and garlic then put in bacon Add tomatoes, lentils, stock and give a good stir Add all other ingredients and salt and pepper to taste Bring to boil stirring so that the lentils don't stick to the bottom. After about 10 minutes bubbling turn down heat to low and simmer for around 1 hour or until lentils are tender Once ready you can serve with homemade bread as a chunky hearty winter soup or blitz to make a really fine soup.
