Tomato and Lentil Soup

Introduction

hearty winter soup or summer light soup you can have it both ways

Ingredients

Serves: 6

  • 2 red onions
  • 4 rashers smokey bacon
  • 2 cloves smoked garlic
  • 2 tins diced tomatoes
  • 6 ounces red lentils (split - the kind you need don't need to pre-soak)
  • 1 dash Worcestershire sauce
  • 1 dash hot pepper sauce
  • 1 dash tomato puree
  • 1⅔ pints chicken broth (or vegetable)

Method

  • Chop red onions and garlic finely
  • Cut bacon into strips. Add to good sized stock pot with a teaspoon of oil and sweat off onions and garlic then put in bacon
  • Add tomatoes, lentils, stock and give a good stir
  • Add all other ingredients and salt and pepper to taste
  • Bring to boil stirring so that the lentils don't stick to the bottom. After about 10 minutes bubbling turn down heat to low and simmer for around 1 hour or until lentils are tender
  • Once ready you can serve with homemade bread as a chunky hearty winter soup or blitz to make a really fine soup.
  • My daughter loves this soup and calls it 'her tomato soup' Enjoy
