A friend made this for me last night and I just had to get the recipe. It is a recipe from the Burgundy area of France and is delicious served with soup or salads I suppose the easiest comparison is that it is the French version of a cheese scone but much more buttery and flaky.

Ingredients

Serves: 0

Metric Cups
  • 200 millilitres water
  • 100 grams sugar
  • salt
  • pepper
  • 125 grams flour
  • 3 large eggs
  • 100 grams Gruyere cheese (or mature cheddar cut into cubes)
  • 7 fluid ounces water
  • 4 ounces sugar
  • salt
  • pepper
  • 4 ounces flour
  • 3 large eggs
  • 4 ounces Gruyere cheese (or mature cheddar cut into cubes)

Method

  • In a pan mix the water, butter, salt & pepper. Slowly bring to the boil. Take this off the heat and add all of the flour. Mix this until it forms a ball.
  • Add the 3 eggs one at a time. Add two thirds of the cheese.
  • Butter a dish (I think my friend used a round tin of approx 23cm) add the mix and sprinkle with the last of the cheese.
  • Put the dish into an oven preheated at 240 degrees Centigrade for 35 minutes and do not open the oven before this time as it will sink. Serve and enjoy!
