Sweetcorn, Red Pepper and Feta Fritters

Mix the first 5 ingredients until smooth. Add the remaining ingredients and let the mixture stand for 10 minutes. Whilst the mixture is standing, heat oil in a large frying pan. Cook spoonfuls in the hot oil until golden brown. Place cooked fritters on kitchen paper to absorb excess oil.
Introduction
Quick easy and rather tasty. Nice for a lunch with a green salad.

Ingredients
Serves: 4 hungry people
- 1 cup self-rising flour
- 2 eggs
- 1 teaspoon salt
- ½ cup soda water
- freshly ground pepper
- 2 cups sweetcorn (if frozen defrost first)
- ¼ diced red bell pepper
- 2 finely sliced scallions
- 2 tablespoons chopped fresh basil
- ½ cup feta cheese (cut into small cubes)
- oil (for shallow frying)

This mix was too fluid, I needed to add more flour in order to obtain nice round fritters.
