Potato Pancakes

Introduction

Left-over mashed potatoes need love, too. This is my favourite way of dealing with them.

Ingredients

Serves: 4

  • 2 cups mashed potatoes
  • 1 cup flour
  • 1 teaspoon baking powder
  • oil (for frying)

Method

  • For every two cups of mash you'll need one cup of flour and a teaspoon of baking powder. If the mash isn't already seasoned, add some salt and pepper.
  • Put everything together in a mixing bowl and mix it until it goes all sconey.
  • Then turn it out onto a floury surface and knead for a couple or minutes.
  • Then roll it out until the dough is about a centimetre thick, and slice it up into squares or triangles.
  • Fry them up until they're golden brown.
  • Additional Information

    You can add grated cheese, spices or seedy mustard to the mixture for extra deliciousness. They are best eaten in the Anglo-Indian fashion, with cheese and chutney.

    • My Mum used to make these but didn’t add baking powder, she cooked them in the oven too. We loved them straight from the oven with butter and cheese.
