Potato Pancakes

For every two cups of mash you'll need one cup of flour and a teaspoon of baking powder. If the mash isn't already seasoned, add some salt and pepper. Put everything together in a mixing bowl and mix it until it goes all sconey. Then turn it out onto a floury surface and knead for a couple or minutes. Then roll it out until the dough is about a centimetre thick, and slice it up into squares or triangles. Fry them up until they're golden brown.
Introduction
Left-over mashed potatoes need love, too. This is my favourite way of dealing with them.

Additional Information
You can add grated cheese, spices or seedy mustard to the mixture for extra deliciousness. They are best eaten in the Anglo-Indian fashion, with cheese and chutney.

My Mum used to make these but didn’t add baking powder, she cooked them in the oven too. We loved them straight from the oven with butter and cheese.
