Grandma's Green Snake Soup

Melt olive oil and butter in large soup pan (I use a mix because Grandma always says that leeks love butter!) Chop onions, celery, leeks and carrots and saute on low heat for 5-10mins Chop courgette and add to the mix, then cover and sweat the veggies for at least 10mins, or till veggies are soft. Add the stock and the bag of salad. Simmer on low for an hour. Blend all together. Serve with a dollop of cream

Introduction
A warm winter soup that my Grandma taught me, we used to ask her : 'What's in the soup Grandma?' and she used to reply: 'Ooh, snakes!' In the end, when I grew up and asked her for the recipe, she had to admit that, in fact, it contained no snakes!!
