Pre-heat the oven to 200c/fan 180c/gas 6. Combine the sugar, flour, and soda in one bowl and combine all the other ingredients in a bowl. Pour the wet into the dry with a metal spoon and fold in your choice of berries/chocolate etc. Then pour the mixture into muffin cases and cook in the oven for 15-18 minutes. When cooked, take out, and place on cooling rack.

Introduction
I love this muffin recipe. I did a bit of re-jiggling so they blow up a bit more, and you can add any filling that you like, blueberries, nuts, chocolate drops, raisins, or apple and cinnamon

This is a good recipe, works well. I like to add fresh fruit. Today, blueberries and raspberries with lime syrup spooned over when hot out of the oven. So good!
I made these with what I could muster. 2 grated apples, chopped dates and walnut pieces. I added cinnamon too. This made 15 muffins. My husband loved them and they went in his lunch box for the whole week and kept well in an airtight container.
To make the muffins dairy-free, I replaced the milk and soda with 200ml water and 2tsp baking powder. This is probably not chemically accurate, but they rose HIGH and are lovely & fluffy! Of course I used baking margarine instead of butter. I added 1tsp vanilla essence and some dark chocolate chips :)
My kids love these muffins, they are super quick and easy to make, and they come out soft and sort of fluffy! We add large chocolate drops to them. I would recommend this recipe to any mum in a hurry.
