Cook the rice according to package directions. Start cooking the sausage over high heat when there is a few minutes left on the rice. You're basically warming it up and browning the sausage a bit. Remove sausage from pan and put on a plate with a paper towel, crack the egg into the hot pan and cook over-easy style. Put desired amount of rice in a bowl, slide the egg over and add the sausage. Break the yolk to cover the rice and sausage. Enjoy Aloha.

We just moved to Maui and this is a great anytime comfort food my neighbor showed me that is simple to make and delicious to eat.

Additional Information
This is a local recipe that is usually topped with gravy and uses a beef patty instead of the sausage. I prefer the sausage and no gravy. You can alter it to suit your mood and appetite. I've even added some soy sauce to the rice.
