Ingredients

Makes: 10-12

Metric Cups
  • 50 grams butter
  • 50 grams golden syrup
  • 40 grams caster sugar
  • 115 grams self-raising flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground ginger
  • 1¾ ounces butter
  • 1¾ ounces golden syrup or light corn syrup
  • 1⅖ ounces superfine sugar
  • 4 ounces self-rising flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger

Method

  • Preheat oven to gas mark 4 (180C).
  • Lightly grease a baking tray.
  • Put the butter, syrup and sugar into a pan and heat gently until just melted. Do not let the mixture boil.
  • Remove the pan from the heat and sift in the self raising flour, the ground ginger and the bicarbonate of soda.
  • Stir until blended and smooth.
  • Divide the mixture into 6/8 pieces and place on baking tray allowing space between each one.
  • Bake for 10 minutes.

    • I love the taste of ginger biscuits, finally i have found the perfect recipe:) I made smaller pieces, I think this recipe is enough for 16 biscuits.
