Preheat oven to 180 In bowl combine the flour ,baking powder, salt and sugar. Add the egg and vanilla extract and mix. Then add milk and coconut, mix well. Pop into greased loaf tin and bake for 1 hour or until bread is springy to the touch, or skewer comes out clean. Leave to cool slightly in the tin, then remove from tin and allow to cool completely......This stuff is great toasted and smothered in pineapple jam. J x
