Introduction

The best blueberry buckle - from our neighbour when I was a child.

Ingredients

For the Muffins

  • ½ cup shortening
  • ½ cup superfine sugar
  • 1 egg (well beaten)
  • 2 cups sifted flour
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • 2 cups fresh blueberries

For the Topping

  • ½ cup superfine sugar
  • ½ cup flour
  • ½ teaspoon superfine sugar
  • ½ teaspoon cinnamon
  • ½ cup butter

Method

  • Cream shortening and sugar together. Add egg and mix well.
  • Sift the flour, baking powder and salt together and add to creamed mixture alternately with milk.
  • Pour into greased 11 inch x 7 inch x 2 inch pan. Sprinkle berries over batter.
  • Topping: Combine sugar, flour, sugar and butter together until crumbly and sprinkle over blueberries. Bake at 350F for 45-60 minutes. Serve warm or cold.
