Blueberry Buckle

Cream shortening and sugar together. Add egg and mix well. Sift the flour, baking powder and salt together and add to creamed mixture alternately with milk. Pour into greased 11 inch x 7 inch x 2 inch pan. Sprinkle berries over batter. Topping: Combine sugar, flour, sugar and butter together until crumbly and sprinkle over blueberries. Bake at 350F for 45-60 minutes. Serve warm or cold.

- ½ cup superfine sugar
- 1 egg (well beaten)
- 2 cups sifted flour
- 2½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup milk
- 2 cups fresh blueberries
For the Topping
- ½ cup superfine sugar
- ½ cup flour
- ½ teaspoon superfine sugar
- ½ teaspoon cinnamon
- ½ cup butter
