Pre heat oven to 140C ( I have a fan oven so not sure what that would be maybe 150ish C) Line the tin with greaseproof paper/liner. Place the first 5* ingredients in a saucepan and heat gently, it'll become all fizzy because of the bicarb, leave to cool. When cool add eggs and finally sieve in the flours. Place in tin and bake for 30mins when I normally put some foil over it to stop it catching, bake for another 20-30mins until nicely risen and firm to the touch. Leave to cool and serve sliced spread with butter and enjoy. It does get better with keeping they tell me but not found out yet as it disappears!
Introduction
A Welsh traditional tea loaf, this recipe is very similar to Glitters Tea Loaf and is sooo easy, its done in a large saucepan so not too much washing up. I use a 2litre tin but a 2lb tin would be OK This also makes an excellent Bara Brith Bread and Butter Pudding. Hope you enjoy!

- 9 ounces mixed dried fruit
- 6 ounces superfine sugar
- 4 ounces butter
- 1 teaspoon baking soda
- 1 cup water
- 2 large eggs (beaten)
- 4 ounces self-rising flour
- 4 ounces all-purpose flour
