Yummy, sticky and sweet!

Ingredients

Serves: 3-4

Metric Cups
  • maple syrup
  • olive oil
  • wholegrain mustard
  • any vegetables (I use sweet potato, beetroot, potato, pumpkin and onions)

Method

Maple Syrup Roasted Veggies is a community recipe submitted by jaxstar84 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Cut up all the veggies into chunks (not too big or the marinade will burn because its in the oven too long)
  • Mix up the maple syrup, oil and mustard in a separate container (the amounts are up to you. if you don't like it too sweet, add less syrup, love mustard, add more!)
  • Pour the marinade over the veggies, making sure they're all covered (you may want to bake the beetroot in another container, as thy bleed a lot of colour and stain the other veggies. i personally love the colour they give off and just let them all cook in one container!)
  • Bang it all in a moderate oven until they're tender and golden! I used 1 whole sweet potato, about 1/3 butternut pumpkin, 3 or 4 potatoes, 3 or 4 beetroots and3 onions to serve about 9 people as a side dish (there was 2 meat dishes and 2 veggie dishes so you may want to make more than that if its the only veggie dish to serve that many people!)
