Heat oven to 400 degrees Fahrenheit. Place chicken pieces in roasting pan and rub with all the above ingredients. Toss a few pealed and quartered potatoes in there if there is room - that way your starch is taken care of. Cook for about 45 min (baste a couple times while it's cooking), until skin is crisp with a think mahogany glaze. If skin isn't crisp enough, turn up heat to broil and blast it for a few extra minutes. Great severed with baby bok chock or choy sam sauteed in garlic and soy.
