Our answer
Nigella's Chicken In A Pot With Lemon And Orzo (from COOK, EAT, REPEAT) is a one-pot dish that cooks the orzo pasta in the flavourful juices created by the chicken and vegetables. Our preference is to use orzo if possible, as with orzo the dish is quite forgiving and can be left to stand for a while after cooking if you are not quite ready to eat.
It is possible to use rice as an alternative (but not quick-cooking rice nor ready-cooked rice), using the same quantity as listed for the orzo. However please note that the rice will be quite swollen and soft at the end of the cooking time and slightly puddingy in texture. We would not leave the version with rice standing for too long before serving as the rice will start to become porridge-like if it is too soft.
