Whisk the eggs in a large bowl, add in parmesan cheese, nutmeg and salt Stir in 1 spoon cold stock and the basil, mix well Heat up the remaining stock until boiling, slowly stir in the mixture in the bowl, stir it when you add the stock, until you see all things mix well. Done.
