Ingredients

Serves: 10-12

Metric Cups
  • 750 grams fruit cake (dark)
  • madeira cake (half a block)
  • 375 grams mixed fruit
  • 100 grams butter (melted)
  • 83 millilitres brandy
  • 250 grams white chocolate buttons
  • cherries (red and green)
  • 26½ ounces fruit cake (dark)
  • madeira cake (half a block)
  • 13¼ ounces mixed fruit
  • 3½ ounces butter (melted)
  • 3 fluid ounces brandy
  • 8⅚ ounces white chocolate buttons
  • cherries (red and green)

Method

  • Crumble fruit cake and madeira cake and combine in bowl.
  • Add mixed fruit, melted butter and brandy. Cover and refrigerate mixture for 30 mins.
  • Shape into teaspoon sized balls and place in paper chocolate cups.
  • Melt choc buttons over boiling water and drizzle over top of puddings.
  • Decorate each pudding with a small piece of both red and green cherries to resemble holly.
  • Refrigerate until icing is set.
