Nothing Fancy Frosting

Introduction

I don't know where my Aunts got this recipe, but this is taken from the handwritten index card given to me by my late Aunt Doll. She would often use this on a layered white cake and fling liberal amounts of sweetened shredded coconut on the surface after spreading it on the outside. I like it as it is. Sometimes all you need do is let butter, sugar, and cream speak for itself... with a little help from vanilla.

Ingredients

Serves: 4-6

  • ½ cup butter
  • 1 cup soft light brown sugar
  • ⅓ cup heavy cream (keep some extra at hand, in case)
  • 16 ounces confectioners' sugar
  • 1 teaspoon vanilla extract

  • In a small pan, bring the butter, brown sugar, and the cream to a boil.
  • Pour into a mixing bowl. Add the vanilla.
  • Using an electric hand mixer, gradually add the powdered sugar.
  • Turning the bowl while mixing, whiz this to a spreadable consistency.
  • Apply to desired cake.
  • Additional Information

    If it seems too thick, dribble in more of the cream, and mix in. No more than a bit at a time. You can add it, but you can't remove it.
