Bourbon Mint Ice Cream

Place milk, bourbon, and mint in a saucepan and bring to the boil. Beat the eggs and sugar until yellow. Pour into a little hot milk to heat it, then pour egg mixture into warm milk stirring all the while. Return to low heat and cook stirring constantly for 10 minutes or until mixture coats spoon. Strain and cool, then refrigerate. Stir in cream and vanilla, and pour mixture into your ice cream maker. Freeze in container.
Introduction
I love the taste of bourbon in cream. This recipe is an old one from a plantation in the deep south.

- 2 tablespoons chopped fresh mint
- 3 eggs
- 1 cup superfine sugar
- ½ teaspoon salt
- 1½ cups cream
- 1½ teaspoons vanilla extract
