Coconut Ice

Introduction

Yes it has a ot of sugar, but you only need a little bit to fill the sweet craving and remind you of childhood.

Ingredients

Serves: serves roughly 8

  • 1 pound superfine sugar
  • 5 ounces unsweetened shredded coconut
  • ¼ pint whole milk
  • red food colouring

Method

  • Heat sugar and milk in a large saucepan on a low flame until the sugar has dissolved
  • Turn the heat up slightly and heat until it becomes very thick- this will take about 10 min
  • Take off of the heat and still in the coconut
  • Pour half into a small baking tray
  • Add a few drops of red food colouring to the other half until pink and pour on top of the white mix.
  • Leave to cool then cut into bite size pieces
