Mix all the ingredients together in a bowl & beat till well mixed. The powdered masalas shouldn't be clumpy... they should mix well. Heat the oil in an omelet pan & when hot enough, add the contents of the bowl. cook through, flipping occasionally. Burning it slightly only enhances the flavour. Plate & serve with crusty / soft bakers bread ... Enjoy !

- 2 eggs
- 1 pinch of turmeric
- ½ teaspoon chilli powder
- ½ teaspoon fresh ginger
- garlic puree
- ¼ teaspoon cumin seeds (finely chopped)
- chilli (as per taste)
- 2 teaspoons onions (finely chopped)
- 1½ teaspoons fresh coriander (finely chopped)
- 1 tablespoon milk
- salt (to taste)
