Prawn Star Curry

Heat the pan with the teaspoon of oil and add the garlic and grated ginger cook for a few second then add the spices with half a cup of water stir and leave for two mins and add the courgettes and cook until the courgettes have started to soften. Then added the tinned tomatoes and salt and pepper leave for a further 5 mins. Add the prawns 5 mins before you want to serve the meal (if you cook the prawns for too long the turn very rubbery) let them warm through for a min or so, add the coriander lemon juice and more salt and pepper if needed. Stir through and serve with rice. Yummy!

Ingredients
Serves: 4-6
- 4 courgettes (cut into half then cut into strips)
- 1 teaspoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon chilli powder
- ½ teaspoon cayenne pepper
- 1 teaspoon turmeric
- 2 tablespoons fresh ginger (grated)
- 4 cloves garlic (grated)
- 1 lemon (juice of)
- 2 tins tomatoes
- prawns (however many you want, I recommend that you get cooked and peeled ones)
- salt (to taste)
- pepper (to taste)
