Potato, Leek and Bacon Soup

Heat oil in large pan over medium heat. Add bacon, celery, leek and coriander. Cook, stirring, for 3 minutes until bacon is cooked. Add potatoes. Cook, stirring, for one minute. Blend in stock. Bring to the boil over a high heat. Reduce heat to medium. Simmer covered for 10 to 15 minutes or until potatoes are tender. Puree until smooth with a blender.

I really loved this soup! It was a simple, effective recipe and it tasted great. The only change I made is that I left some of the bacon bits and potato out of blender and then added them in later so that I could have a chunky soup instead of a totally smooth one :-)
