Preheat oven to 160c/315f. Place the dry ingredients in a bowl, mix well. Place butter & syrup in a pan over medium heat and melt. Place the bicarb and water in a bowl and stir to combine. Add the bicarb to the saucepan. Add the liquids to the dry ingredients and mix together. Roll teaspoons of the mixture into balls and place on a greased and lined baking tray. Flatten each ball gently with a fork. Bake for 15-20 minutes, allow to cool. Makes approx 20 biscuits.

- 1 cup unsweetened shredded coconut
- ⅗ cup brown sugar
- 1 cup quick-cooking oats
- 4 ounces butter
- 1 tablespoon golden syrup or light corn syrup
- ½ teaspoon baking soda
- 2 tablespoons boiling water
