Soda Bread

Preheat oven to gas 8/230c Sieve dry ingredients together. Pour in most of the milk and using one hand mix together, add more milk if needed, the dough should be softish but not too wet. Kneed just enough to make it tidy but don't over work it or it will be tough. Shape into a round and place on a baking tray. Cut a deepish cross in it (traditionally done to let the fairies out). Bake for 15minutes, then turn the oven down to gas 6 and bake for another 20-30minutes. When cooked it should sound hollow when tapped underneath.

- 1 teaspoon baking soda
- 13½ fluid ounces buttermilk
- ½ soda bread flour (or strong plain flour)
