- 410 grams kidney beans
- 1 tablespoon vanilla extract
- 1 tablespoon water
- 2 teaspoons espresso coffee
- 1 teaspoon baking powder
- ½ teaspoon bicarbonate of soda
- 60 grams cocoa
- 100 grams butter (softened)
- 250 grams sugar
- 5 medium eggs
- 14 ounces kidney beans
- 1 tablespoon vanilla extract
- 1 tablespoon water
- 2 teaspoons espresso coffee
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2 ounces unsweetened cocoa
- 4 ounces butter (softened)
- 9 ounces sugar
- 5 medium eggs
Method

- Preheat oven to 170°C
- Prepare a 20cm tin with oil or parchment paper
- Drain and rinse the kidney beans and process them with the water and vanilla and one egg in a blender or food processor until smooth.
- In a separate bowl sieve in the cocoa, baking powder and bicarbonate of soda. In another bowl beat the butter and sugar until fluffy.
- Then add the remaining eggs and next beat in the bean mixture and finally beat in the cocoa mixture until smooth. Pour the batter into prepared pan and bake for 40 -50 minutes, or until a skewer comes out clean.
- Remove from oven and cool in the tin for 15 minutes then remove to a wire rack to cool completely.

This cake is amazing. Even my mother who is a superb cook looked at me strangely when I made it, but it is a hit with our entire family. I used a chocolate ganache to "ice" the cake and it is a winner
