Ingredients

Serves: 6-12

Metric Cups
  • 1 kilogram potatoes
  • 300 millilitres creme fraiche
  • 150 millilitres mayonnaise
  • 1 small onion (chopped)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar
  • salt
  • chives
  • 2⅕ pounds potatoes
  • 11 fluid ounces creme fraiche
  • 5 fluid ounces mayonnaise

Method

  • Boil potatoes until just tender. Peel and let cool completely (you can do this the day before, keep peeled potatoes in fridge, covered with kitchen towel). Cut potatoes in 0.5 cm thick slices.
  • Mix the rest of the ingredients except the chives, taste if you need more sugar or mustard.
  • Mix dressing with potatoes, chop chives and drizzle them over the salad.
