Banana Cake

Introduction

This cake recipe is from the 1940s that was put together by the Women's Auxiliary in Alice Springs, Australia to raise money for the Royal Flying Doctor Service. Another favourite especially with my grandfather.

Ingredients

Serves: 2 loaf cakes

  • 1 cup superfine sugar
  • 1½ cups self-rising flour
  • ½ cup butter
  • 1 teaspoon baking soda (dissolved in 2 tbsp milk)
  • 2 tablespoons milk
  • 2 eggs
  • 3 bananas
  • 1 teaspoon vanilla
  • 1 pinch of salt

  • Preheat oven 150c.
  • Cream butter & sugar.
  • Add well beaten eggs, milk & soda then add well mashed bananas.
  • Add flour, vanilla and a pinch of salt.
  • Divide between 2 x loaf tins.
  • Bake 20 - 30 minutes.
  • Additional Information

    The original recipe calls for 2 x sandwich tins then once cake is cool put together with mock cream & sprinkle the top with icing sugar. I find loaf tins much better as this really doesn't need any extra work. I also use the loaf tins because one can be used immediately & the other can be frozen again & thawed when needed. I have also spooned this mix into muffin trays and frozen them in groups of 3 or 4. Thaw when needed or stick them frozen in the kids lunchboxes. By the time they go to eat it they are thawed out & they have kept sandwiches cool. It is very moist & works much better with the ripest possible bananas. The closer to throwing away point the better. I freeze bananas straight in a bag - no peeling required until I have enough. Then thaw them to use and there is less arm work in the mashing stage.
