Clean the fish and keep aside (dry it with paper towel so it doesn't have any access water) sprinkle with salt and black pepper. Into a bowl, put in chopped coriander, thinly sliced lemon grass, crushed garlic, olive oil, black pepper sauce and oyster sauce. Mixed it well. Get some aluminium foil, put on top the fish and pour all the ingredients to the fish. Lastly squeeze the lemon juice along the fish. Fold the aluminium to half and fold the fish in and make it like a bag. Do not leave any holes along sides of the foil. Steam the fish for about 25-30 minutes. Enjoy.....
