Introduction

In the old days in Holland, if someone fancied you, they'd offer you a cookie in the form of the person they fancied, if he or she accepted it, you'd become a couple! How romantic!!

Ingredients

Serves: 12

Metric Cups
  • 250 grams flour
  • 150 grams brown sugar
  • 100 grams unsalted butter
  • 20 grams speculaas spice powder
  • 50 millilitres water (cold)
  • 25 grams natural almonds
  • 8⅚ ounces flour
  • 5⅓ ounces brown sugar
  • 3½ ounces unsalted butter
  • ¾ ounce speculaas spice powder
  • 2 fluid ounces water (cold)
  • ⅞ ounce raw almonds

Method

  1. Preheat the oven to 175oC.
  2. Put all ingredients except the almonds in a bowl, gradually add the water and knead to a soft ball.
  3. Place the almonds in some cold water, bring to boil and then strain. Let them cool and take off the skin. Chop them not too fine and add them to the dough and knead again (this is optional).
  4. Sprinkle some flour on a working space, roll out the dough to ½ cm thick, dip the cutter in some flour and cut out the cookie form of your choice or keep it as it is.
  5. Sprinkle some almond slithers on the cookies and bake them for 20-25 minutes.
