Combine the ingrediënts in a bowl, season to taste. Divide the salad over on toasted sides of bread, spreading to cover edge and top with the cheese & anchovies, if using them (do!) Grill for 2-3 min or until bubbling a golden.

- 180 grams tuna (not oiled, drained)
- 1 tablespoon fresh flatleaf parsley (coarsely chopped)
- 1 stick celery
- 2 spring onions
- 1 tablespoon lemon juice
- 4 slices ryebread (lightly toasted on one side)
- 180 grams Cheddar cheese (thinly sliced)
- 4 anchovies (optional)
- 6⅓ ounces tuna (not oiled, drained)
- 1 tablespoon fresh italian parsley (coarsely chopped)
- 1 stick celery
- 2 scallions
- 1 tablespoon lemon juice
- 4 slices ryebread (lightly toasted on one side)
- 6⅓ ounces Cheddar cheese (thinly sliced)
- 4 anchovies (optional)
