Lime Daiquiri Ice Cream

Introduction

This isn't so much a recipe, as an accidental adaptation of the Margarita Ice Cream in Nigella Express that worked really well. I hope Nigella doesn't mind and I should mention that I don't take any credit for this recipe whatsoever but just wanted to share with everyone that this version is also very good. Yesterday I was expecting dinner guests straight after work and wanted to make the margarita ice cream the night before. Unfortunately, I'd stupidly overlooked the fact that there was no tequila and orange liqueur left in the drinks cabinet! There was, however, an almost full bottle of Havana Club so I had the idea to substitute the tequila and cointreau for rum and adapt the recipe to make ice cream inspired by that other lime-based South American drink instead. All I can say is that it was delicious and went down a storm with my dinner guests!

Ingredients

Serves: 8

Metric Cups
  • 125 millilitres lime juice
  • 75 millilitres light rum
  • 150 grams icing sugar
  • 500 millilitres double cream
  • 4 fluid ounces lime juice
  • 3 fluid ounces light rum
  • 5⅓ ounces confectioners' sugar
  • 18 fluid ounces heavy cream
